Heading into my all time favorite season, lets hear it for SUMMER! Yay! crowd cheers! Being in Michigan the winter can be kinda long and I dream of those warm sunny days being out in the yard and doing outdoor activities. One of the great things about warm weather is being able to get my clients outside for a few workouts too, the workout just takes on a fun energy being outside and a change of scenery is always nice! Get outside when you can and move your body, yard work, walks, hikes, playground workouts, swimming, biking….. its all great just enjoy it and make it fun

Recipe of the month! GRILLED PINEAPPLE PORTOBELLA BURGER STACK

INGREDIENTS for 4 servings
Marinade: whisk these together
2 TBSP lemon juice
1 TBSP minced rosemary
1 TBSP minced thyme
1 TBSP dijon mustard
2 smashed and minced garlic cloves
4 TBSP braggs liquid aminos or coconut aminos
Burger stack
4 large portobella mushrooms with stems and gills removed
1-2 large yams peeled and sliced into rounds
4 slices of pineapple
1 tsp smoked paprika
You can either pre -bake the sweet potatoes if you want them to cook faster and then finish them on the grill since they take a little longer or if you have an air fryer they work great in that too. we dusted the pineapple with some smoked paprika and brushed the mushrooms and sweet potatoes with the marinade.
You can serve these on your favorite bun or wrap, we topped the stack with guacamole and tomato for some extra color and cuz guacamole is basically a food group.
