Chicka, Chicka, POW!
Wacky Wednesday focus on Chickpeas or Garbanzo beans as they are sometimes called. These little guys are one of the worlds healthiest foods. Check out this write up and learn all about the benefits that can be all yours by gettin down on these powerhouses!
Here is a recipe for roasted chickpea and broccoli burritos:
What you need:
2 cans of 15 oz chickpeas. rinsed and drained
1 chopped yellow onion
1 chopped red pepper
1 chopped head of broccoli
4 cloved minced garlic
2 tsp chili powder
1 tsp cumin
1 tsp smoked paprika
black pepper and cayenne pepper to taste
1-2 TBSP of liquid aminos or tamari sauce (like soy sauce but way better!)
3 TBSP olive oil
mix all veggies except garlic in a big bowl and pour on the spice blend. put all of that onto 1-2 baking sheets and cook on 425 for 20 min. take it out and add the garlic. cook another 15 min
Now your ready to wrap it all up into a sprouted grain tortilla or a few romaine leaf wraps, top it off with some diced avocado and salsa and get down on it! Pair this up with some steamed broccoli and a side salad and you have one healthy killer meal! This mix is awesome made into a ‘taco bowl’ salad as well. Great flavors using spices that you may already have around the pantry. This is a cheap and delicious meal, I have yet to meet anyone who did not love it!
