Meatless Monday Recipe!

ROASTED VEGETABLE LASAGNA

INGREDIENTS:

1 Box of whole grain lasagna noodles

1 tub of low fat ricotta cheese

1 container of crumbled feta cheese

VEGETABLES: These can be whatever you want but I like red peppers, green peppers, orange peppers, 1 zucchini, 1 yellow squash, 1 eggplant, 1 onion, 1 package  baby portabella mushrooms, 1 can black beans, diced onion,asparagus,olives.  Try a mix of anything you like

(if you want to add meat: ground turkey is a great  lean option, just season it with Italian seasonings and brown it in a skillet)

1 jar of spaghetti sauce (minimal ingredients, no high fructose corn syrup) organic if possible

Cooke lasagna noodles and set aside

Combine ricotta and feta into a mixture

Cube or slice all of the vegetables and roast them in the oven with extra virgin olive oil and sea salt. 375 degrees for about 25-30 min. just keep an eye on them and turn every so often

When everything is cooked you can start layering the noodles, then the roasted vegetables, cheese mixture, and sauce. Just keep repeating until everything is gone.  Bake at 375 degrees for 35-40 min. If you like you can top it off with some grated parmesan cheese.

Serve with a mixed green salad and enjoy!
