Teach your Kids Tuesday – Snack Edition!

This Tuesday let’s get our kids back into the kitchen! Healthy eating habits start at home so it is important mom and dad make good ones too. Being a role model for your child with a healthy lifestyle makes choices easier when outside of the home. Eating together, cooking together, and being active together helps kids keep the structure they need. We know kids are snacking all the time so this week let’s prep a snack together in order to have a healthy on the go option vs. a cruddy snack food that comes from a box! Give it a try! This is a great way to get some fruits and veggies in without them knowing! Kid and adult friendly!

SUNNY SNACK BARS

Prep time 15 min

Cooking time 45 min

Ingredients:

2 cups carrots, finely shredded, about 3 medium carrots
1/4 cup dried apricots, chopped (no sugar added)
1/2 cup golden raisins (no sugar added)
2 cups quick cooking oats
1/2 cup raw walnuts, chopped
1 12 oz can apple juice
concentrate, thawed
pinch of cinnamon

Preparation:

Heat oven to 350* degrees. Combine all dry ingredients and mix well. Add apple juice concentrate and stir until evenly moistened. Place in a greased 9×11 glass baking dish, pressing ingredients firmly into pan. Bake for approximately 40 minutes, or until bars are brown. Allow to cool completely before slicing.

You can switch up the dried fruit and nuts to any kind that you like!
