Meatless Monday!

Sweet potato plantain mash tacos:

Ingredients for filling:
3- 15oz cans low sodium black beans or 16 oz bag of soaked black beans
1 very large sweet potato
2 ripe plantains (if they are green they are not ripe,look for softer yellow ones with black markings)
Juice of 1 lime
3 1/2 cups low sodium veg broth or water. I used water, worked just fine
2 cloves minced garlic
2 tsp onion powder
Dash of cumin
Salt,pepper to taste

Bring all ingredients to a boil until potatoes are tender then drain off the excess liquid and mash everything until you like the consistency

1 large diced onion
2-3 medium tomatoes
1 bunch cilantro stems and all
Juice of 1 lemon
2 cloves minced garlic or garlic powder
Salt to taste
If you like heat you can add a jalapeno or cayenne pepper,chipotle powder for a smoky taste. Get creative with any flavors you like.
Blend all ingredients in a food processor.

Serve on whole grain tortillas or lettuce wraps with sauteed spinach & peppers.

Easy quick meal everyone will love!
Serve with a mixed green salad on the side.
